The lazy baker.

This past year I started baking my own bread and it is much easier than I ever would have imagined.  There is nothing better than bread right out of the oven!  Especially when you know exactly what is in it!  This is the easiest recipe that I know and is a good place to start (there are only 4 ingredients)!  This dough is ready to bake the same day (no overnight rising required).  It can be kept in the fridge for up to 10 days so you can bake a little at a time so it is always fresh!

*I sometimes cut the recipe in half is I don't think I will use the dough before it goes bad. 

The result is a wonderfully soft, and chewy textured bread.  You can add different toppings or ingredients to switch it up.  For example:  Sesame seeds, garlic and rosemary, honey and whole wheat, cinnamon raisin...the combinations are endless!

Easiest Homemade Bread
Makes 3 to 4 small loaves

2 teaspoons yeast
1 teaspoons salt
7 cups of flour (or 3.5 cups of white and 3.5 cups of whole wheat flour
3.5 cups of water)
olive oil and cornmeal for sprinkling (optional)

Combine yeast, water, and salt in a large bowl and let set for 5 minutes.  Add flour a little at a time, and mix well.  Cover the bowl with platic wrap and allow to rise for at least 45 minutes.  The longer, the more flavorful it will be. Turn the dough over a few times on a floured surface.  (This is a very sticky dough and sticks to your hands, try putting some olive oil or cooking spray on your hands to make it easier).  Form the dough into a ball and let rest for 15 minutes.  Preheat the oven to 450 degrees.  Lightly grease a loaf pan or cooking sheet with olive oil and sprinkle cornmeal.  Add or mix in toppings, as desired, and place in the oven for 30-40 minutes until golden on top.
