Red, White, and Blue Cheesecake Bites

These cheesecake bites are deadly delicious.  They are the perfect dessert for the Fourth of July because they are portable, don't require any cutting, and they can be made ahead.  The best part is that they are mini pieces of heaven and one seems to fill the sweet tooth desire.  I have made these several times and they have come out great every time!  These are simple to make and use fresh fruit to go with the season!  Over the winter I made them with Oreos instead of fruit and they were also very yummy!

These bites are lightened up by using low-fat cream cheese and I replaced some of the sugar with Splenda. Many recipes use Nilla cookies as the crust but I thought that Golden Oreos would be a sweeter surprise.   For about 5$ and 35 minutes of your time you can make a dessert that is both healthy and tastes and presents like it is from a gourmet bakery!  Try the recipe today!  

Red, White, and Blue Cheesecake Bites
Serves 24

Ingredients:
1 package of Golden Oreos
1 package of low-fat cream cheese, softened, cut into cubes
1/4 cup of sugar
1/4 cup granulated Splenda (the type you bake with) or ~ 10 packets
2 eggs
1 Tbsp vanilla extract
Cool whip or whipped cream
1 package of blueberries
1 package of strawberries, sliced

Directions:
Separate 12 of the Oreos and scrape the white part into a mixing bowl.  Set the Oreos to the side (you will use them later).  With an electric beater, beat the cream cheese, sugar, splenda, eggs, and vanilla extract with the white part of the Oreo.  Place mini cupcake papers in cupcake pans then place 1 half of the oreo in the bottom of each cupcake paper.  Pour 2 Tbsp of the cream cheese filling onto each Oreo.  Bake for ~15 minutes.  Allow to cool and place in the refrigerator for 3 hours.  (can stay in the fridge for up to 2 days).  A few hours before you are ready to serve them top each cheesecake bite with whipped topping and strawberries and blueberries!
