Taco Tuesday! Mango Jalepeno Chicken Sausage Taco

Taco night is one of my favorite meals of my week, probably because I'm obsessed with spicy foods and salsa!  This meal was so easy to throw together because I used pre-cooked chicken sausages that I got at BJ's and our salsa was already made from last night!  (Go planned leftovers!)

12s_spicymango.jpgChicken sausage is a good alternative to traditional Italian sausages because it is lower in fat and calories.  It has become increasingly popular and many brands are carrying lots of creative variations for whatever meal you may need.  I recommend Al Fresco because they have pre-cooked or raw sausages, have great flavor, and tons of varieties!  Also, they steer clear of preservatives, use all-natural ingredients, and are gluten-free.

If you are fortunate to have a good deli, you might even be able to find a sausage that is made in store... sans the preservatives!

Tacos are a meal in themselves because they include the starch (1 whole wheat burrito or 2 6" tacos), protein (cheese, beans, meat), vegetables (lettuce, tomatoes, onion salsa).  Instead of serving your taco night with mexican rice, reach for a side salad to keep calories in check!  If you want seconds, make a salad with a little extra protein and skip the wrap!

Chicken Sausage Tacos with Peach Salsa
Serves 6

6 whole wheat taco shells
1 package of chicken sausage (sliced)
1.5 cups shredded cheese (optional)
1 cup of Peach salsa (recipe from 7/10)
1 onion, sliced and sautéed

Serve with a side salad and viola, dinner is served... QUICK

~400 calories, 17 g fat, 40 g carbohydrate, 19 g protein, 20 g fiber, 900 mg sodium.

~350 calories, 19 g fat, 30 g carbohydrate, 20 g protein, 4 g fiber, 950 mg sodium
