Wicked Easy Wednesday... Sweet Chili Chicken Tacos with Peanut Slaw

It's Tuesday and that means it's taco night at my house!  I grilled extra chicken last night so dinner tonight was a breeze to put together.  This combination was inspired by a few of my favorite flavors and it came together so much better.  The result was a sweet but spicy mixture with crispy slaw inside.  I used Trader Joes Sweet Chili sauce because I had it on hand, but next time I plan on making it from scratch (it is super easy).

Spicy Peanut Slaw Recipe
Serves 4

1/2 head green cabbage (Nappa preferred)
1/2 onion, diced

1 Tbsp Chili or Sesame Oil
3 Tbsp Rice vinegar*
1 tsp minced ginger*
1 Tbsp garlic, chopped
1 Tbsp Natural peanut butter
*I used a white balsamic vinegar infused with ginger.

Slice the cabbage into small slices and mix with the onion in a large bowl.  In a small bowl mix all ingredients for the dressing, and pour over the cabbage.

Nutrition facts: 1/2 cup
~60 calories, 2 g carbohydrates, 1 g protein, 5 g fat, 1 g fiber, 17 mg sodium.

Sweet Chili Chicken Tacos
Serves 4

1 pound of boneless skinless chicken breast
1 ounce of Cabot Cheddar Cheese
4 whole wheat tortillas (Taco size or Flat Outz)
1/2 cup of spicy peanut slaw
1 Tbsp Sweet Chili Sauce

Grill or saute the chicken until it is thoroughly cooked.  Melt the cheese on the tortilla (microwave is easiest).  Slice the chicken into thin strips and place on top of the cheese.  Spread the sweet chili sauce over the chicken and top with the spicy peanut slaw!
