Herb Chicken with Egg Noodles in a Blue Cheese Mustard Sauce

 This delicious pasta dish is great for entertaining a large crowd.  It features slices of herb chicken, caramelized onions, cranberries, apples, and broccoli in a light blue cheese mustard sauce.  Plus, it is a great dish for those on a budget because the ingredients are all fairly inexpensive.  This one dish has all of the components of a balanced meal and keeps you satisfied and feeling good.  Opt for whole wheat egg noodles to add extra fiber to keep you feeling full.

Herb Chicken Pasta Toss
Serves 8

Ingredients:
1.5 pounds of boneless skinless breasts
1 tsp rosemary
1 tsp thyme
pepper, to taste
2 Tbsp honey
2 Tbsp dijon mustard
2 Tbsp plus 1 tsp olive oil
1 onion, diced
1 package of whole wheat egg noodles
1/2 cup crumbled blue cheese, divided
2 Granny smith apples, diced
1 head of broccoli


Directions:

Make the honey mustard sauce by combining 2 Tbsp of olive oil, the honey, and the mustard.  Rub the chicken with rosemary, thyme, and pepper.  Cut into bite-size pieces and saute in a non-stick frying pan until the center is no longer pink. Steam the broccoli and keep warm.  Set aside and keep warm.  Heat 1 tsp of olive oil in the same skillet and cook the onions 10 minutes, stirring regularly, until they start to caramelize.  Cook the egg noodles as directed.  Toss all of the ingredients into the pasta and mix well.
