Day 3: Kale and Turkey "Rueben"

I had this genius idea that sautéed kale would be awesome in a sandwich. And no better sandwich than a Rueben, my favorite. I must say that most of this sandwich does not resemble the original, but it is just as tasty!  A traditional Rueben is corned beef, swiss cheese, sauerkraut, and thousand island dressing on rye bread... and toasted.  I knew I had to switch out the sauerkraut (even though that might be my favorite part) and substitute the kale in.  So the end result is a kale and turkey sandwich with swiss cheese and thousand island sauce, on whole wheat bread.

Kale and Turkey "Rueben"
Makes 1 sandwich

Ingredients:
2 slices of whole wheat bread
3 slices of deli turkey
1 slice of swiss cheese
1 cup of washed kale
1/2 tsp olive oil
1 clove of garlic, chopped
2 Tbsp light thousand island dressing

Directions: Saute the olive oil and garlic in a frying pan.  Add the kale and cook for 3-5 minutes or until tender. Meanwhile assemble the sandwich by placing the turkey on a slice of bread.  Top with the sautéed kale and swiss cheese.  Spread thousand island dressing on one side of the bread and place on a non-stick frying pan.  Cook over medium heat for 3-5 minutes, cover and cook for additional 5 minutes.

450 calories, 35 g carbohydrate, 34 g protein, 19 g fat, 6 g fiber, 390 mg Calcium, 550 mg sodium
