Day 6: Kale with Red Onion, Craisins, and Almonds

This is a light and flavorful side dish perfect for any meal. It is the perfect amount of sweet and tangy and of course has all the benefits of the super veggie, kale.  The best part about this colorful dish is that it is done in about 10 minutes, and is impressive to serve!

Kale with Red Onion, Craisins, and Almonds
Serves 4

4 cups of kale, chopped
1 Tbsp red wine vinegar
1 Tbsp olive oil
2 Tbsp orange juice
1/2 red onion, diced or sliced thin
1/3 cup Craisins
1/3 cup slivered almonds
Pepper, to taste

Steam the kale in a frying pan for 3-5 minutes, or until tender.  Toss with the remaining ingredients and serve immediately.
