Gluten-Free Southwestern Black Bean Burger

Enjoy these southwestern-inspired black bean burgers.  They are slightly sweet and slightly spicy and full of black bean goodness.  These veggie burgers are completely gluten-free, perfect for those who enjoy wheat and for those with gluten-intolerance or celiac disease.  Instead of using breadcrumbs to bind the burgers together, I used brown rice.  These burgers are perfect on a roll or as a topping for a salad.

Brown rice takes longer than white rice to cook, meaning that you need to plan 45 minutes to cook a batch of rice.  Instant brown rice is a little more expensive, but it only takes about 10 minutes to make.  As a plus, it is just as good for you as regular brown rice.  Make extra brown rice to throw in soups, cold rice salads, or veggie burgers!

Time-saver!  This is a great trick to save time and serve correct portions when making dinner!  Fill muffin cups with cooked brown rice and freeze.  Once frozen, remove from muffin cups and place in a ziploc bag.  To reheat: place on a microwave safe plate and heat for 2 minutes.  

Southwestern Salad: Toss corn, red and green peppers, tomatoes, and jalepenos and serve over a bed of greens.  For extra pizzaz: Add shredded cheddar cheese!

Gluten-Free Southwestern Black Bean Burger
Makes 8 Burgers

3 cups of cooked black beans
1 Tbsp cumin
1 Tbsp garlic powder
1 Tbsp onion powder
3 cloves garlic
1/2 red pepper, diced
1/2 onion, diced
1/2 cup corn
1/2 cup brown rice
2 Tbsp fresh cilantro
2 Tbsp fresh jalepeno

Cook rice as directed.  Place the black beans, garlic, and spices in the food processor and pulse until smooth.  Add the remaining ingredients and pulse until combined.  Form into patties, about 1/2 inch thick.  Spray cooking spray on a non-stick frying pan.  Heat over medium heat and cook the burgers for 4 minutes per side.  Top with salsa and enjoy!
