Superbowl Sunday Buffalo Chicken Calzone

I'm already thinking ahead, trying to help you plan your menu for your superbowl party, which is coming right up. These calzones are sure to please and can be made in advance.  To cut down on a mess (and to cut down on extra calories) put the dressings inside the calzone instead of setting out dipping sauces!

So this isn't the healthiest snack, but it is better than fried chicken wings and is a little more balanced.  There will be more lighter appetizer recipes coming along, so stay tuned in!

Buffalo Chicken Calzone
Serves 16 (Makes 2 calzones)

2 whole wheat pizza crusts
3/4 pound of chicken breast
1 cup shredded part-skim mozzarella
1 cup shredded cheddar cheese
1 cup Frank's buffalo sauce
1/2 cup light ranch or light blue cheese Dressing

Preheat the oven to 425. Cut the chicken into 1" cubes. Saute the chicken in a frying pan with non-stick cooking spray until the center is no longer pink. Remove from heat and set aside.

Spray two baking sheets with non-stick cooking spray. Stretch the pizza dough out on a clean, floured surface and place on the baking sheet. Place a thin layer of chicken on 1/2 of the dough.  Mix the cheeses together and sprinkle 1 cup over the chicken. Pour 1/2 cup of buffalo sauce and 1/4 cup of dressing over each calzone. Fold in half and press the sides of the calzone together.

Bake at 425 for 35 minutes.  Cut each calzone into 8 pieces and serve hot.
