Fondue Festivities

Fondue is a great way to entertain a small group of friends. No, I'm not talking chocolate fondue... I'm thinking meat and vegetable fondue. The best part about fondue is that the prep is done ahead of time, before your guests arrive, so you can relax and enjoy the party! Doing a broth based soup to cook the meat is a healthy way to fondue (as opposed to oil fondue). I did this one with low-sodium beef and onion, this gives everything you decide to cook a wonderful flavor!

All you need to get started it a fondue pot (if you want to make the investment an electric one with a double boiler is a great investment! Get everything ready and prepare your broth... o and don't forget the vino!

Meat and Vegetable Fondue
Serves 4

Ingredients:
1 Tbsp olive oil
4 cloves garlic, minced
2 onions, sliced thin1 tsp thyme leaves
2 bay leaves
2 tsp black pepper
5 cups low sodium beef broth
3/4 cup white wine

Assorted Vegetables: Recommended (cut into bite-size pieces) asparagus, mushrooms, squash, peppers, broccoli.
Assorted meats: Lean beef, chicken, shrimp (cut into bite-size pieces)


Directions:
Heat the oil in a saucepan over medium heat. Add the garlic and saute for 1 minute. Add the onions and cook for 3 minutes. Add the beef broth and spices and simmer for 30 minutes. Add the wine and cook for additional 10 minutes. Transfer to your fondue pot.

Place your vegetables and meat on the fondue skewers. Place in the broth for 1 minute for vegetables, 2 for thin sliced beef and shrimp and at least 3 for chicken. If cooking chicken, make sure that it is cooked thoroughly (no pink in the middle). Dip into a yummy sauce (you can make or buy them).

Dipping Sauces 

Garlic Ginger: 1 tsp each fresh minced ginger and garlic, 2 Tbsp rice vinegar, 1 Tbsp brown sugar, 2 Tbsp reduced-sodium soy sauce, 1/4 tsp red pepper flakes

Peanut Sauce: 1/4 cup peanut butter, 2 Tbsp reduced-sodium soy sauce, 1/4 cup hot water, 1 Tbsp brown sugar, 1/4 tsp red pepper flakes


Sweet Chili Sauce: 1/4 cup rice vinegar, 1/4 cup white sugar, 1 Tbsp water, 1 1/2 Tbsp fish sauce, 3 cloves minced garlic, 1/4 tsp red pepper flakes, 1 Tbsp corn starch dissolved in 2 Tbsp water
