Meatless Monday...Eggplant-stuffed Portabella Mushrooms

Stuffed portabella mushrooms are one of my favorite vegetarian meals. You can get really creative with them and they always come out great!

I stuffed these with eggplant, blue cheese, onions, sun-dried tomatoes, and basil and they were to die for. I served it with wilted spinach and dill and garlic roasted red potatoes. Forget meat and go vegetarian with this meal!

Mushrooms may provide support for your immune system due to their phytonutrient content. They are also a great source of selenium and several B vitamins. Add them to your veggie burgers, salads, and sandwiches to boost the nutrition value.

Eggplant-stuffed Portabella Mushrooms
Serves 4

Ingredients:
4 portabella caps
2 Tbsp olive oil, divided
salt and pepper, to taste
1 small eggplant, diced
3 cloves garlic, minced
1 onion, diced
1/4 cup sundried tomatoes, sliced
1/4 cup blue cheese, crumbled
2 Tbsp basil, diced

Directions: 
Preheat the oven to 350. Brush olive oil and sprinkle salt and pepper on each mushroom. Place face down on a cooking sheet and cook for 10 minutes. Heat 1 Tbsp of oil in a medium size frying pan. Saute the eggplant, garlic, and onion for about 10 minutes, or until soft. Add the sundried tomatoes, blue cheese, and basil. Remove from heat. Remove the mushrooms from the oven and place 3/4 cup cover filling in each mushroom cap. Cover with tin foil and bake for 15 minutes. Remove tin foil and bake for additional 10 minutes.

Dill and Garlic Roasted Red Potatoes
Serves 4
8 small red potatoes, sliced thin
2 cloves garlic, minced
2 Tbsp dill, diced
Salt and pepper, to taste
2 Tbsp grated Parmesan cheese

Preheat the oven to 350. Toss all ingredients together and place on a cookie sheet. Bake for 45 minutes.
