Italian Grilled Steak with Mushroom & Red Pepper Fettuccine

I rarely cook steak so when I do I am a bit of a perfectionist. This recipe is so easy and is great for a fancier BBQ, or if you get sick of burgers and hot dogs. London broil is a leaner cut of beef and you can often find it on sale. It is usually served thinly sliced, so it is perfect to go with pasta or on top of a salad.

The featured salad has baby beets, sliced pears, cucumbers, and mesculin mix with a golden balsamic and olive oil dressing. Simple yet delicious. 

Italian Grilled Steak with Mushroom & Red Pepper Fettuccine
Serves 4

1 1/4 pounds london broil steak
2 Tbsp chopped garlic
1 Tbsp olive oil
Pepper, to taste
1/8 tsp salt
1/4 tsp oregano, basil, and onion powder

Sprinkle salt, pepper and all the herbs on the steak, drizzle olive oil and garlic and rub. Allow to marinate for at least 20 minutes. Preheat the grill. (Meanwhile start your pasta dish). When the grill is hot, place the steak down and cook 5 minutes over medium high heat. When there are grill marks, its ready to flip. Flip and cook additional 3-10 minutes depending on how well you like your steak cooked. Pull off of the grill and allow to sit for 5 minutes. Cut into thin strips, against the grain of the meat.

1/2 box of fettuccine (I like Dreamfields brand)
 2 cloves garlic, chopped
1 red pepper, chopped
4 oz mushrooms, sliced
1 onion, chopped
3 Tbsp olive oil, divided
1/2 cup reduced-sodium beef broth
1/4 cup Parmesan cheese

Bring water to a boil. Add the pasta and cook until tender. Meanwhile, heat up 1 Tbsp of olive oil in a frying pan, add pepper, mushrooms, and onion and cook for 3 minutes, add garlic and cook for 1 minute. Add beef broth and simmer. Drain the pasta and mix the vegetables with the pasta. Add remaining olive oil and the parmesan and heat over medium heat for 2 minutes.

Serve hot, with the sliced steak and a salad!
