Make the Pledge... Meatless Monday

Meatless Monday is an international movement to cut out meat consumption for one day a week. This helps promote a 15% reduction in meat consumption for your week. Limiting meat helps reduces the amount of saturated fats  in your diet, which are associated with increased LDL (or bad cholesterol) and heart disease.  Saturated fats are found in meat, as well as in butter, dairy products, coconut, and palm oil. When you  choose dairy products, select the low fat options.

Going meatless once a week is good for the environment. Did you know that the meat industry produces more emissions than transportation worldwide? By participating, you can take part in slowing down this trend. 
 Okay, my rant is almost over, but this might really catch your attention. Meatless Monday can help you save money!!!! Have you ever noticed that meat is one of the more expensive staples on your grocery list? Swapping meat for beans or other proteins can really add up and cut down on your food budget. 

 Monday is the start of the week, which is a perfect time to start making lifestyle changes. Start fresh after the weekend.

You can still build a balanced meal without meat as your source of protein, and these meals can be just as satisfying! Pick a protein, a starch, and some vegetables and your meal is ready!
Good sources of protein include: Beans, eggs, cheese, milk, tofu, nuts, seeds, and whole grains!

Going meatless on Monday doesn’t mean you have to prepare a special meal, just omit the meat. Here are some simple meal ideas!
Breakfast: 2 eggs with toast and fresh fruit
                 Oatmeal with raisins
                  Toast with peanut butter and banana
                  Cold cereal with fresh fruit and a hard boiled egg

Lunch: Hummus and Veggie Wrap
            Salad with chickpeas and feta cheese
            Black bean and cheese quesadilla + side salad
            Vegetarian chili
            Grilled cheese with onion and basil

Dinner: Veggie burger with sweet potato fries
             Pesto pasta with broccoli and sundried tomatoes
             Vegetable pizza
             Tofu Stir-fry
             Macaroni and Cheese with seasonal vegetables
