Meatless Monday... Southwestern Sweet Potato and Black Bean Burger

It was absolutely gorgeous out yesterday. It ended up hitting 74 mid-day, something that Vermont never sees in March! So I decided to buy my first gas grill yesterday and invite some friends over to give it a try. Now, I have been working on perfecting my veggie burger recipes for a long time and I think I got it!

These have corn, sweet potatoes, and black beans which makes them a little different. The sweet potatoes give a nice flavor and add a good serving of fiber, and, caretenoids (potential anti-cancer and anti-aging compounds). 
Any one that knows me knows they have to be full of flavor and pretty spicy to really hit the spot. 
Melt some Cabot cheddar cheese on top and serve  on a nice whole wheat bun for the ultimate veggie burger! Serve with grilled veggies (We did corn, peppers, zucchini, onions, and asparagus) and fruit for dessert for a balanced meal. 

Also pictured is a pasta salad that one of my best friends made, and it was gooood! This creamy pasta salad has peas, Craisins, slivered almonds, grapes, and scallions for the perfect summer salad.

Southwestern Sweet Potato and Black Bean Burgers
Makes 12 burgers

Ingredients
2 small sweet potatoes (about 1 cup)
1 can of black beans
1 egg
1/2 cup breadcrumbs
2 Tbsp garlic
2 Tbsp garlic powder
1 Tbsp smoked paprika
1/2 tsp pepper
1/2 tsp red pepper flakes
1/2 cup red onion, chopped
1/2 cup frozen corn
1/2 cup red pepper, chopped
1/4 cup cilantro leaves


Serve with Lettuce, tomato, and onion

Directions
Poke holes into the sweet potatoes, and place the sweet potatoes. Let cool, and peel. Place in a food processor or blender. Drain and rinse the black beans, combine 1/2 of the can of beans with the sweet potatoes, puree until smooth. Add the egg and bread crumbs and spices and pulse until combined. Add the remaining black beans and vegetables, pulse until combined. Form into 12 burgers. (If they are too wet add 1/4 cup of breadcrumbs until it is a fairly dry mixture. Bake, pan-fry, or grill the burgers and serve hot!
