Apple Enchiladas!

This is a great treat, especially after a nice Tex-Mex meal! I love homemade applesauce, there is something so tasty about it. It is naturally sweet and tastes exceptionally delicious over vanilla ice cream (like apple pie without the crust)!
I made this with homemade apple sauce, but you could use canned applesauce or prepared apple pie filling if you are short on time.

You can always make more applesauce and have it for later or freeze! It is a great low calorie dessert or snack. I like to put it over Greek yogurt for a special breakfast! :)

Apple Enchiladas
Serves 4

4 apples, peeled and diced
1/4 cup water
1/2 tsp cinnamon

4 6" wheat tortillas
2 Tbsp light cream cheese plus dash of nutmeg (optional)
2 Tbsp margarine
2 Tbsp brown sugar

Combine apples, water, and cinnamon in a saucepan over medium heat. Cover and simmer for 30-45 minutes, stirring occasionally.

Preheat the oven to 350. Mix the cream cheese and nutmeg together, swipe 2 tsp of the mixture on each tortilla. Place 1/4 cup of apple filling in each tortilla and roll up. Melt the margarine and brown sugar in a small bowl in the microwave (about 30 seconds). Drizzle over the top of the tortillas. Bake for 10 minutes, serve warm with 1/2 cup of ice cream.

Nutrition Facts:
1 enchilada plus 1/2 cup "light" ice cream

300 calories, 60 g carbohydrates, 5 g protein, 7 g fat (2 saturated), 6 g fiber.
