Red, White, and Blue Cheesecake Pudding Pie

This is the perfect dessert to show off your patriotic spirit! A cheesecake pudding fills a graham cracker crust and is topped with blueberries and strawberries. This dessert is refreshing and light and doesn't require you to turn the oven on. Did I mention that its ready in less than 20 minutes? Making it the perfect choice for a last-minute party or picnic.

Making simple changes to the recipe (sugar-free pudding) made with skim milk and light cool whip can slash the calories. Or skip the crust and make berry and pudding parfaits! Either way, it is a great way to get a little extra Calcium!

Red, White, and Blue Cheesecake Pudding Pie
Serves 8

1 pre-made graham cracker crust
1 package of instant sugar-free cheesecake flavored pudding
2 cups skim milk
1 cup light whipped topping, thawed
1 cup strawberries, sliced
1/2 cup blueberries

Whisk the pudding and the milk together for 2 minutes.  Pour into the pie crust and place in the refrigerator for 5 minutes. Spread the whipped topping on top of the pie and top with strawberries and blueberries.
