Honey Ginger Grilled Pork Tenderloin

Grilling season is here, and its time to think outside the bun! Yes, the occasional burger (or dare I say...hotdog) can hit the spot, but you might find yourself wanting a little more variety for your grilling pleasure. Try this pork tenderloin that is sweet and savory with hints of garlic, ginger, and lime!

If you can buy pork tenderloin when its on sale, you can fit it into a "meal on a budget". Served with roasted potatoes, green beans, and grilled onions, this meal for 4 cost about $10.00 or $2.50 per serving. (Minus the pantry items).

Pork tenderloin is a very moist and lean meat. In fact it has less fat than boneless skinless chicken breast, making it a great option for a protein at mealtimes. It is wonderful baked or grilled and can be seasoned in a variety of different ways. Try it with a pineapple and ginger glaze, balsamic with Italian herbs, or with a smokey BBQ rub...the options are as limited as your imagination.

Say What? 3 ounces cooked (about the size of a deck of cards) is ~125 calories.
As a comparison, the same amount of pork spare ribs would set you back ~350 calories.

Ginger Grilled Pork Tenderloin
Serves 4


1/4 cup light soy sauce
2 cloves garlic, minced
1 Tbsp olive oil
1 Tbsp fresh ginger, minced
2 Tbsp rice vinegar
1 Tbsp lime juice
2 Tbsp honey

1 pound pork tenderloin

Directions: Mix the first 7 ingredients together and marinade for at least 30 minutes. Preheat the grill, lower to medium-high heat and place the tenderloin on the grill. Cover and cook for 7-10 minutes. Flip and cook for remaining 5-7 minutes or until meat thermometer reads 140 degrees. (Pork does not need to be cooked fully white, it can remain a bit pink)

Grilled Potatoes and Onions
Serves 4

4 small baking potatoes, quartered
1 onion, sliced
1 Tbsp olive oil
pepper, to taste

Place all ingredients in a tin foil pouch and place on the grill. Cook for 30 minutes or until potatoes are soft. Serve hot.
