Meatless Philly Cheese"steak"

Going meatless doesn't mean giving up your favorite foods, its just about rethinking them. Portabella mushrooms have a hearty texture and savory flavor when seasoned right... and they are a great substitute for many recipes with meat. These philly cheese"steaks" substitute the steak for mushrooms and they might be my new favorite hot sub!

This meal is ready in 25 minutes making it a great option for the end to a perfect day. And a much better choice than take-out or frozen dinners! Cut the vegetables ahead of time and dinner is served in 10.

Sans Cheese

Meatless Philly Cheese"steak"
Serves 4

1 Tbsp olive oil
1 sweet onion, thinly sliced
4 portabella mushrooms, thinly sliced
1 red bell pepper, sliced lengthwise
1 yellow bell pepper, sliced lengthwise
2 Tbsp Worcestershire sauce
1/2 tsp garlic powder
pepper, to taste
2 Tbsp steak sauce
4 whole wheat hot dog buns or sub rolls (for the larger appetite)
1 cup shredded Mexican or low-fat mozzarella

1. Heat the oil in a large frying pan over medium heat. Add the onion and mushrooms and cook for 5 minutes.
2. Add the peppers, Worcestershire sauce, garlic powder, and pepper and cook until tender.
3. Place 1/2 cup of vegetables in the roll, top with 2 tsps of steak sauce and 1/4 cup shredded cheese.
4. Place subs on a cooking sheet lined with tin foil and then under the broiler for 3-5 minutes or until the cheese is melted and golden.
5. Serve hot with a side salad or steamed vegetable and enjoy!
